Taiwan is home to as many as 269 mountain ranges that rise above 3,000 meters, making it one of the world’s islands with the highest density of high mountains. The unique terrain of these mountains has created Taiwan’s excellent high-mountain tea industry. “Taiwan High Mountain Tea” refers to tea leaves produced in tea gardens above 1,000 meters above sea level. The high altitude of the mountainous regions results in cool temperatures, misty conditions, and a short duration of sunlight, all of which contribute to a lower content of bitter components such as catechins in the tea leaves. Additionally, high-mountain tea leaves are soft and thick. They have a high content of pectin, resulting in vibrant green color, rich and mellow taste, and fragrant aroma, which makes them suitable for long-term steeping. High mountain tea, predominantly oolong, highlights the essence of the “original flavor,” maintaining a light fermentation process that has propelled the trend of “light fermentation” in oolong tea. The most renowned and sought-after aroma and flavor profile of high mountain tea is referred to as the “mountain air” or “shan-tou-qi,” attributed to the diverse range of latitudes, altitudes, environments, and soil nutrients unique to each mountain. The tea trees’ absorption of these natural elements produces distinct tea soup flavors, resulting in even identical tea leaf varieties having distinct and discernible flavors.

 

台湾は、3,000メートルを超える山脈が269も存在し、世界でも高山密度が最も高い島の一つと言えます。これらの山々の独特な地形が台湾の優れた高山茶産業を生み出しました。「台湾高山茶」とは、標高1,000メートル以上の茶園で生産された茶葉を指します。高山地帯は涼しく、早朝と夕方には霧がかかり、平均的な日照時間が短いため、茶葉に含まれるカテキンなどの苦味成分が低くなります。また、高山茶の茶葉は柔らかく、厚みがあり、果胶質含有量が高いため、鮮やかな緑色の色合い、豊かでまろやかな味わい、香り高い香りがあり、長時間の淹れたてにも適しています。

.高山茶は、主にウーロン茶で、本来の味わいの「原点」を強調し、軽い発酵工程を維持しているため、ウーロン茶の「軽発酵」のトレンドを推進しています。「高山茶」の最も有名で求められる香りと味わいのプロファイルは、「山の空気」または「山頭気(さんとうき)」と呼ばれ、それぞれの山に固有の異なる緯度、海抜、環境、土壌養分の多様性に起因します。茶の木がこれらの自然要素を吸収することで、独特の茶湯の風味が生じ、同じ茶葉品種でも異なる風味が生じます。
